Refined Sugar Free, Vegan, Paleo
With Christmas just around the corner, so are all those yummy desserts!
Bringing your own dessert is a great way to have some control over what you end up eating around the holidays.
You get to make a nice gesture to the host AND you get to personally benefit from it, genius!
I am such a fan of peanut brittle, but its not necessarily great for the waistline. This recipe has absolutely no refined sugar, and is sweetened with only natural ingredients. It is super crunchy and addictive, I have been making on repeat this December!

- 3/4 cup Sliced almonds
- 1/4 cup Honey
- 1/4 cup Maple Syrup
- 1 tsp Vanilla
- pinch of sea salt
Line a baking sheet with wax or parchment paper.
Optional - Toast your almonds on a dry pan until fragrant for a little extra flavor.
In a saucepan over medium heat, bring to boil your honey, maple syrup, coconut sugar, vanilla and salt.
Turn down to med/low heat and stir mixture for a couple minutes. Once sugar is dissolved, add in your almonds. Keep an eye on the temperature with a kitchen thermometer, stirring consistently until it reaches 300°.
Spread your mixture onto your lined baking sheet in an even thin layer and sprinkle with sea salt. Put in the refrigerator to cool, then break into pieces to serve!
