(Gluten-Free, Refined Sugar Free)
These gummies might be my new fave!!
They are only 2 ingredients (if you count the bottle of juice as 1 ingredient) and can be made in so many different ways. The image above shows some that I made with beet and strawberry juice but I’ve also used watermelon juice, green juice and even golden mylk!
Think of this as a “choose your own adventure” sort of recipe.
TIP: Make sure your juice has at least some fruit in it – I used a straight vegetable green juice by accident and the outcome was sort of salty and weird AF.
It only takes a few minutes to get the mixture together and then all you have to do is wait while they set in the fridge, easy peasy!
I hope you all enjoy. Tag me @livesandforks so I can see your creations!
- 16 oz Bottled Juice I prefer a vegetable with some added fruit
- 2 scoops Vital Proteins Gelatin
In a pot on the stovetop heat your juice into a gentle boil.
Remove from heat & add your gelatin slowly while whisking vigorously as to not form any clumps.
You can also add to your blender if you don't mind some additional clean up.
Pour your mixture into a pliable rubber mold. If you don't have one of these, feel free to simply pour into cups and enjoy as a healthy Jello.
Your yield will depend on this method.
Set the molds in the refrigerator for 2 hours to allow them to set.
Pop the gummies out and enjoy!
