Now is the season for apples! And I have seriously been making the most of it.
I have been whipping this recipe up at least a couple times a week. It is sooo easy, it only takes 10-minutes and it works as a dessert OR a breakfast! I recommend serving it with a side of your choice of plain yogurt. It adds a nice cool component that works so well with the warm apples and crunchy topping.
I hope you guys all enjoy this recipe as much as I do!!
- 2 Honeycrisp Apples peeled and thinly sliced
- 2 Bartlett Pears peeled and thinly sliced
- 1/4 tsp Ground Nutmeg
- 1/4 tsp Ground Cardamom
- 1 tsp Cinnamon
- 2 Tbsp Water
- 2 Tbsp Coconut Oil
- 1 1/2 cups Rolled Oats
- 3 Tbsp Coconut Sugar
- 4 Tbsp Almond Flour
Add apples, pears, cinnamon, nutmeg, cardamom, and water into a pot on the stovetop on med-high heat.
Stir until the apples and pears are evenly coated with spices, cover with a lid and let simmer for 5 -10 minutes or until they are soft.
While your apples are simmering, warm your coconut oil in a frypan and add your oats, coconut sugar, almond flour and a sprinkle of cinnamon on med-high heat. Constantly stir this mixture until it becomes aromatic and the oats start to brown, approximately 3-5 minutes.
Once your apples and pears are ready, remove them from the pot with a slotted spoon (this is to drain any excess water) and layer them into the bottom of your serving dish.
Top the apple and pear mixture with your oat crumble and serve with a side of plain greek yogurt, or dairy free yogurt. You can also just eat it as is! Enjoy!
